Eating healthy can be expensive and overwhelming. These 3 ingredient banana oatmeal pancakes are flour-less, sugar-free, and low calorie; not to mention cheap and super easy to make.
-
2 ripe bananas -
2 eggs -
1 cup oats
-
Preheat a skillet over low heat -
Mix the bananas, eggs and oats. A blender works best for this*. -
Grease your skillet with cooking spray or butter -
Add batter to skillet. Keep in mind that, because these are flourless they don’t hold together as well as regular pancakes so it’s best to keep these on the smaller side. -
Allow the pancake to cook through on one side before flipping. This will assist in keeping them together during the flip. If you’d like to add any additional ingredients such as chocolate chips, nuts, or berries do so before flipping. -
Flip and cook the other side until done; repeat for the rest of the batter. -
Serve with your favorite pancake toppings.
Makes about 6 pancakes.
-
*You don’t have to use a blender to mix your ingredients, however it does make the pancakes fluffier when the eggs and bananas are whipped really well. -
There are a ton of ways to dress these up, and enhance the flavor. Try adding ½ tsp of cinnamon or vanilla extract to your batter. You can also add chocolate chips, coconut, peanut butter chips, berries, raisins, or nuts.
